Peri Peri Chicken with Mushroom Sauce

Don’t simply make grilled chicken! Today, try this tastiest peri-peri chicken breast, which is juicy and tender and full of bursting flavor. Along with it, I will also share my mushroom sauce recipe. You can make it with pasta, steak, omelets, or baked potatoes. You can use chicken with bones as well as chicken legs.

  • Chicken breast: You can also take thigh pieces, which are considered to be juicier and more tender than breast pieces. Chicken with bones can also be used; it is also more juicy.
  • Oil: Olive oil is the best, but you can use any other that you like. Even butter.
  • Smoked paprika: This is a key ingredient. Smoky paprika, rather than simple paprika, adds a unique BBQ and hot flavor to it. But if you don’t have it, use the regular one.
  • Chili flakes
  • Oregano
  • Salt and pepper
  • Garlic: I use garlic powder, but you can use fresh garlic as well.
  • Lemon juice

Mushroom sauce

  • Chicken broth: If you’d like to add vegetable broth, you can also add it.
  • Heavy cream: It will give a smooth, velvety, creamy texture to the sauce.
  • Mushrooms: chestnut mushrooms are used, cut into slices.
  • Garlic: if you don’t like it, skip it; if you don’t like it chunky and want to just add flavor, then use garlic powder.
  • Salt and pepper
  • Italian herbs: I prefer thyme and Rosemary.
  • Butter: It is very important; you can use oil as well if you like, but butter adds aroma and creaminess.
  • Cornstarch: If you like to make it thicker, add it last; otherwise, skip it.

Vegetables

  • Serve the chicken with vegetables you like, either stir-fried or boiled. I use peas, corn, and carrots. You can use whatever vegetables you like, but seasonal ones are best.

How to make peri-peri chicken

Marinate the chicken well with the peri peri sauce, which includes all the spices, oil, and lemon juice, and leave it overnight for the best results. The chicken will absorb all the spices and moisture. While cooking it will remain tender. If you don’t have enough time, leave for at least 2 or 3 hours.

Grill it on either an electric or a charcoal grill. Another option is to heat the grill pan and add olive oil to it. Place the chicken breast on it. Grill the chicken from all sides until it is tender and cooked. Don’t overcook it; it will dry out from overcooking.

Change the sides and direction of the chicken to get good grill marks. Also, add the additional left-over marinade to it. It will make it more tender and juicy. At last brush with oil to get shiny peri peri chicken breast pieces. Serve with mushroom sauce and vegetables.

How to make mushroom sauce

In a pan, add butter, mushrooms, and garlic. Sauté it for a few minutes until golden brown.

Add cream along with broth and seasonings. If you want to make it a bit thicker, dissolve cornstarch in the broth and then add.

Let the cream shimmer on a low flame. On high flame, it may split. Stir it continuously for 5–10 minutes, until you get the consistency you desire. Turn the flame off and serve.

How to boil vegetables

Boil the corn separately from the peas and carrots. Put the salt in boiling water and boil the vegetables until they become soft. Serve these with grilled peri peri chicken and mushroom sauce.

Instructions

  • Marinate the chicken with all the ingredients. Leave it overnight before grilling, or for at least 2 to 3 hours.
  • Grill it on the grill until the chicken is done. Also, while grilling, brush it with leftover marinade and brush the sides with oil.
